About the Role:
We are seeking a motivated Baker to join our team on a full-time basis. This is a hands-on position requiring strong baking skills, cake decorating expertise, sound product knowledge, and the ability to work efficiently within a commercial cake production environment.

The successful candidate will be responsible for preparing, baking, assembling, decorating, and finishing a variety of cakes, pastries, desserts, and specialty baked products while maintaining production schedules, quality standards, stock control, and food safety requirements.

This is a full-time permanent position based on a minimum 38-hour working week.

Key Responsibilities:

Bakery Production and Cake Decorating:
  • Prepare, mix, bake, assemble, decorate, and finish a variety of cakes, pastries, desserts, and specialty baked products in accordance with established recipes and production requirements. 
  • Apply cake decorating techniques including piping, frosting, fondant application, glazing, filling, layering, finishing, and decorative presentation. 
  • Produce custom cakes and specialty orders in accordance with customer specifications, design requirements, and quality standards. 
  • Operate commercial baking and cake production equipment safely and efficiently to achieve production targets. 
  • Monitor baking times, temperatures, product appearance, texture, and consistency throughout all stages of production. 
  • Ensure consistency in product quality, presentation, flavour, and decorative finishes. 
  • Produce baked products in accordance with daily production schedules and customer demand. 
  • Maintain high standards of workmanship and attention to detail across all products. 

Product Development and Recipe Management:
  • Assist in developing, testing, and refining recipes to maintain quality and product consistency. 
  • Contribute ideas for new cakes, desserts, pastries, specialty products, and seasonal offerings. 
  • Participate in product costing activities to support profitability and operational efficiency. 
  • Monitor customer feedback and sales trends to identify opportunities for product improvement. 
  • Assist in maintaining standardised recipes, decorating specifications, and production procedures. 

Stock Control and Ingredient Management:
  • Monitor stock levels of ingredients, decorating materials, and packaging supplies to ensure uninterrupted production. 
  • Assist with ordering, receiving, checking, and storing ingredients and supplies. 
  • Apply FIFO stock rotation principles to minimise spoilage and wastage. 
  • Conduct stocktakes and monitor ingredient usage to assist with cost control. 
  • Maintain accurate inventory and purchasing records as required. 

Team Collaboration and Workplace Support:
  • Work collaboratively with bakery staff and management to ensure efficient daily operations. 
  • Provide guidance and assistance to junior bakery staff and apprentices where required. 
  • Maintain a productive, organised, and professional working environment. 
  • Communicate effectively with supervisors and colleagues regarding production requirements and operational issues. 
  • Contribute positively to workplace culture and team performance. 

Food Safety and Compliance:
  • Ensure compliance with Australian Food Safety Standards, food handling requirements, and company procedures. 
  • Maintain safe food preparation, storage, and sanitation practices throughout all production activities. 
  • Maintain cleaning schedules, production records, and food safety documentation as required. 
  • Ensure bakery equipment and machinery are operated safely and maintained appropriately. 
  • Comply with Workplace Health and Safety requirements at all times. 

Operational Administration and Reporting:
  • Assist with maintaining production records, wastage reports, and operational documentation. 
  • Support supplier liaison activities including checking deliveries and ingredient quality. 
  • Assist in monitoring production efficiency, ingredient usage, and product yields. 
  • Participate in compliance reviews, audits, and other administrative requirements as required. 

Mandatory Requirements:
  • AQF Certificate IV in Baking, Baking and Pastry, Commercial Baking, or a closely related field. 
  • Applicants holding the above qualification must have either: 
    • A minimum of 1 year full-time relevant experience in an Australian commercial bakery, cake production facility, patisserie, or food production environment; or 
    • Successful completion of a minimum 2-year structured workplace-based training placement or apprenticeship within the Australian baking or hospitality industry. 
  • Demonstrated experience working within an Australian commercial bakery, cake production facility, patisserie, or similar food production environment. 
  • Demonstrated experience in cake assembly, finishing, decorating, and presentation techniques. 
  • Strong working knowledge of Australian Food Safety Standards, food handling practices, and hygiene requirements applicable to commercial food production environments. 
  • Sound understanding of Workplace Health and Safety obligations applicable to bakery and food production operations. 
  • Experience in ingredient management, stock control, inventory procedures, and supplier coordination. 

Core Competencies:
  • Strong technical baking skills across cakes, pastries, desserts, and specialty baked products. 
  • Advanced cake decorating skills including piping, frosting, fondant work, finishing, and decorative presentation. 
  • Ability to work effectively in a fast-paced commercial bakery or cake production environment while maintaining quality standards. 
  • Sound understanding of baking processes, recipe execution, cake assembly, decorating techniques, and product finishing. 
  • Strong understanding of Australian food safety and hygiene requirements. 
  • Effective organisational and time management skills. 
  • Ability to coordinate multiple production tasks and meet strict production deadlines. 
  • Strong communication and teamwork skills. 
  • Ability to maintain consistency in product quality, presentation, and production standards.
