ABOUT THE ROLE:
Little Corner BBQ has an opportunity available for an experienced Cook to join its kitchen team on a full-time basis. This is a hands-on operational role responsible for preparing, cooking, and presenting authentic Chinese barbecue dishes and a diverse range of Asian-inspired cuisine in accordance with established recipes, quality standards, and service requirements. The successful candidate will contribute to all aspects of kitchen operations including food preparation, commercial cooking, stock control, quality assurance, and maintaining a safe and efficient commercial kitchen environment. The role requires the ability to manage allocated kitchen sections, coordinate workflow during busy lunch and dinner service periods, maintain consistency in food quality and presentation, and work collaboratively with kitchen and front-of-house staff to ensure efficient service delivery and customer satisfaction. This is a full-time permanent position based on a minimum 38-hour working week.
KEY RESPONSIBILITIES:
Food Preparation and Cooking:
- Prepare, cook, and present a broad range of authentic Chinese barbecue dishes and Asian cuisine in accordance with established recipes and presentation standards.
- Prepare premium meat, poultry, seafood, vegetables, and other ingredients using appropriate preparation techniques including cutting, trimming, marinating, seasoning, skewering, and portioning.
- Apply appropriate commercial cooking techniques including charcoal grilling, roasting, stir-frying, deep-frying, steaming, braising, and sautéing while maintaining consistency in flavour, texture, and presentation.
- Monitor cooking times, temperatures, seasoning, and food quality throughout preparation and service.
- Prepare sauces, marinades, seasonings, and accompanying ingredients in accordance with established recipes and business standards.
Kitchen Operations and Service Delivery:
- Support efficient kitchen workflow during lunch and dinner service to ensure timely preparation and delivery of customer orders.
- Manage allocated kitchen sections while maintaining organised, clean, and service-ready workstations.
- Work collaboratively with kitchen and front-of-house staff to ensure accurate order preparation and efficient service delivery.
- Assist with daily menu preparation, specialty barbecue items, and seasonal menu offerings.
- Maintain consistency in food quality, presentation, and portion control across all menu items.
Stock Control and Kitchen Organisation:
- Assist with receiving, inspecting, storing, and rotating food supplies in accordance with established stock control procedures.
- Apply FIFO stock rotation principles to minimise spoilage and maintain product freshness.
- Monitor ingredient usage and report stock shortages or purchasing requirements to management.
- Participate in stocktakes and maintain organised storage areas.
- Ensure appropriate labelling, storage, and handling of food products in accordance with food safety requirements.
Food Safety and Compliance:
- Maintain compliance with Australian Food Safety Standards and safe food handling practices.
- Maintain high standards of hygiene and cleanliness throughout food preparation areas, equipment, utensils, and workstations.
- Monitor food storage, preparation, cooking, cooling, and holding temperatures to ensure compliance with food safety requirements.
- Follow workplace cleaning schedules, sanitation procedures, and operational policies.
- Comply with Workplace Health and Safety requirements, including the safe operation of commercial kitchen equipment.
General Duties and Team Contribution:
- Maintain a clean, organised, and efficient workstation throughout each shift.
- Follow instructions from senior kitchen staff and management with accuracy and attention to detail.
- Work collaboratively within a team environment to support efficient kitchen operations during busy service periods.
- Demonstrate reliability, professionalism, punctuality, and a positive approach to work.
- Participate in ongoing workplace training and continuous professional development to enhance culinary knowledge and operational performance.
MANDATORY REQUIREMENTS:
- Relevant qualification in Commercial Cookery (Certificate III or higher) or a closely related field.
- Minimum one (1) year of relevant full-time experience within a commercial kitchen environment.
- Previous experience preparing Chinese barbecue, Asian cuisine, or similar regional cuisine within a commercial restaurant environment will be highly regarded.
- Demonstrated experience preparing and cooking food within a commercial restaurant or hospitality environment.
- Sound knowledge of Australian Food Safety Standards, food hygiene, and safe food handling practices.
- Ability to work efficiently within a fast-paced commercial kitchen environment.
- Availability to work evenings, weekends, public holidays, and rostered shifts as required.
